Recipes of the Lockdown: Sandie’s Chicken and Chorizo Pasta

Chicken & Chorizo Pasta.

Serves – 4



  • 500g chicken
  • 2 chorizo sausages
  • 1 jar sun dried tomato pesto (I like to use Leggo’s)
  • 300ml cream
  • 4 spring onions
  • 150-200g freshly grated Parmesan cheese (packet is okay, but flavour is better fresh)
  • Chilli flakes (optional)
  • 500g of Pasta – any variety (I prefer spirals or penne as the sauce clings better)



  1. Dice chicken and chorizo into bite sized pieces and add to a frying pan on medium – high heat. Finely dice spring onion while you’re browning the chicken and chorizo.
  2. Add the spring onions to browned chicken and chorizo and sauté for a further couple of minutes until spring onions are slightly soft.
  3. Add the sun dried tomato pesto to the browned chicken and chorizo and mix until well combined before adding in the cream, parmesan cheese and chilli flakes if you’re using them. Taste sauce and add salt and pepper to taste.
  4. Spoon mixture over your favourite pasta and hook in!
