Recipes from Hidden Harvest: Peperonata

Hidden Harvest Peperonata: a delicious savoury condiment to add to a Summer dip and bickie spread or even on top of pasta!


  • 1 tablespoon olive oil
  • 2 onions (diced)
  • 6 capsicums of any colour (chopped into thin slices)
  • 3 tomatoes (roughly chopped)
  • 2 garlic cloves (thinly chopped)
  • 1 tablespoon balsamic vinegar (you could also use white or brown vinegar)
  • fresh oregano


  • Heat olive oil in a large saucepan
  • Add onions and cook for 4 minutes
  • Fry capsicums and tomatoes for five minutes
  • Add garlic cloves
  • Cook for 8 mins
  • Stir through vinegar
  • Stir through some oregano leaves
  • Eat with crackers, bread or over pasta!
