Nicky’s Wicked Weeknight Pasta

Last night, I made a killer Chicken and Capsicum pasta dish.  I made it up…. hope you enjoy it.

Feeds 3-4


  • 1 chicken breast, cubed
  • 1 red capsicum
  • 2 cloves garlic
  • Large can coconut milk
  • 300g pasta
  • Herbs – thyme and pasley
  • Onion Flakes
  • Salt and Pepper

Step 1. Blitz the Red Capsicum, garlic and herbs in the magic bullet.

Step 2. Fry the chicken, once browned, add the capsicum sauce and fry for a few minutes to combine

Step 3. Add a can of coconut milk to the chicken and capsicum sauce, season to taste with salt and pepper and simmer for 5 minutes.

Step 4. Add to your favourite pasta and (Optional) sprinkle with parmesan cheese and maybe even a cheeky slice of garlic bread.
