Hidden Harvest Peperonata: a delicious savoury condiment to add to a Summer dip and bickie spread or even on top of pasta!
Ingredients:
- 1 tablespoon olive oil
- 2 onions (diced)
- 6 capsicums of any colour (chopped into thin slices)
- 3 tomatoes (roughly chopped)
- 2 garlic cloves (thinly chopped)
- 1 tablespoon balsamic vinegar (you could also use white or brown vinegar)
- fresh oregano
Method:
- Heat olive oil in a large saucepan
- Add onions and cook for 4 minutes
- Fry capsicums and tomatoes for five minutes
- Add garlic cloves
- Cook for 8 mins
- Stir through vinegar
- Stir through some oregano leaves
- Eat with crackers, bread or over pasta!
