Add this sweet potato kale frittata to your weekly menu for a quick and easy healthy meal that can be whipped up in less than 30 minutes and served for breakfast, lunch, or dinner.
INGREDIENTS
- 6 large eggs
- 1 cup milk
- 1 tbsp butter
- Pinch salt
- Ground pepper
- 2 cups sweet potatoes
- 2 tbsp olive oil
- 2 cups chopped kale
- 1/2 small red onion
- 2 clove garlic
- 1/3 cup cheese – goats or fetta
INSTRUCTIONS
Preheat oven to 180 degrees Celsius. Whisk together eggs, milk and butter
Sauté sweet potatoes in 1 tablespoon hot oil in a 10-inch ovenproof non-stick pan over medium heat 8 to 10 minutes or until potatoes are tender and golden; remove and keep warm.
Sauté kale, onion and garlic in remaining 1 tablespoon oil until kale is wilted and tender. Stir in potatoes.
Pour egg mixture evenly over vegetables, cook 3 or more minutes. Sprinkle egg mixture with goat cheese.
Bake in the oven for 10 to 14 minutes or until set.
