RECIPE OF THE WEEK

Chocolate Chip Protein Cookies

Serves 4         

INGREDIENTS:

  • 2.5 large ripe bananas
  • 1 egg
  • 1 serving protein powder of choice (non-flavoured)
  • 1¾ cups quick oats
  • ¼ cup dark chocolate bits (optional)
  • ¼ cup applesauce
  • ½ teaspoon Vanilla Extract
  • Walnut pieces

DIRECTIONS:

  1. Preheat the oven to 180 degrees C.
  2. Line a baking tray with baking paper.
  3. Mash bananas in a mixing bowl. Add egg and protein powder and stir well with a fork.
  4. Add oats and mix well.
  5. Add in the chocolate bits (optional), walnut pieces, and applesauce.
  6. Use a tablespoon to measure out portions of the dough, dropping them onto the baking sheet. You can shape these into balls or press and fatten each cookie with a spoon. (The dough will not spread out much during baking.)
  7. Bake 15 minutes, or until lightly browned. Remove and let them cool on a rack.
